Oatmeal Cookie Apple Crisp

For the Cookie Crust:
1 cup granulated sugar
1 cup packed brown sugar
1 cup butter, softened
3 teaspoons vanilla extract
2 large eggs
2 cups all-purpose flour
2 cups old-fashioned oats
1 teaspoon baking powder
1 teaspoon salt
For the Apple Filling
7-8 medium apples (about 7 cups) - peeled and chopped into 1-2 inch pieces. (l like sweeter apples like Gala, but try Granny Smith for a more tart apple flavor.)
1 Tablespoon lemon juice
2 teaspoons cinnamon
1/3 cup light brown sugar
Instructions
Preheat the oven to 350 degrees.
For the Cookie Crust, place granulated sugar, brown sugar, and butter in the mixing bowl of an electric mixer and beat on medium speed until light and fluffy.
Add vanilla and eggs and beet well.
In a separate medium bowl, combine flour, oats, baking powder, and salt. Add the sugar mixture in the electric mixer. Mix on low speed until blended.
Cover and refrigerate 30 minutes.
For the Apple Filling, combine all the filling ingredients in a medium bowl.
Spray a 9"x13" glass baking dish with cooking spray. Spread apple mixture in to the pan.
Drop spoonfuls of cookie dough topping all over to completely cover the apples.
Bake uncovered for 30-35 minutes, or until lightly browned and bubbly.
